Bombay Chicken Curry

Here is one of those easy recipes I was talking about. Oh- wait- that post never worked because of an "Error 500" message- after I spent an hour and a half of typing, compiling and editing. Maybe another day...

A friend made this for our family a couple weeks and I had to get the recipe. I have never been inclined to attempt anything with "curry" in the name. Maybe it was the different flavors, maybe it was a voice in the back of my head saying it had to be super complicated, maybe it was just fear of the unknown... I cannot stand wasting ingredients to try a recipe that nobody will eat. But since we had it with our friend first, I was not worried about this one. I don't think you should be, either. I made it for dinner last night and this chicken received rave reviews all around. Everybody from the 9 month old to the 11 year old downed it while singing its praises and thanking me for the delicious dinner.

Bombay Chicken Curry

4 C. cooked chicken shredded

1 tsp. salt

1/4 tsp. ginger

1/2 C butter

1 C chopped onion

2 cloves garlic, minced

1 1/2 T curry powder

1 lemon or lime

1 C water

Combine salt & ginger and sprinkle over chicken. Add curry powder to hot melted butter in a saute pan. Cook onion and garlic until tender in butter mixture. Add water & the chicken. Simmer for 10 minutes or until the sauce has simmered down into a coating on the chicken.

Squeeze lemon or lime over meat just before serving. Serve w/ rice and toppings.

some great things to sprinkle on top:

cut up grapes (believe me- it’s yummy)

chopped tomatoes

chopped cucumbers

chopped green onions

peanuts

hard boiled eggs cut up

sweetened shredded coconut



We had ours served over brown rice. Also, because my shredded chicken in the fridge was a bit past its prime, I used canned chicken from Costco. Easy shortcut unless you actually have cooked, shredded chicken on hand!

I loved it!
