Chicken Tacos (Filling)
2 1/2 lbs boneless, skinless chicken thighs (the recipe called for 1 1/2 but I had what I had)
1 t salt
1/2 t pepper
1 t garlic powder (I use granulated)
1 1/2 t onion powder
1 t chili powder
1 t cumin
The original recipe called for 4 c water and to combine it all in a skillet and let it simmer down until the water is almost completely gone. I chose to start it in the crockpot this morning instead and did not add any water. BUT that would be a way to fast forward the same dinner.
We are going to have this as the meat in our burritos/soft tacos tonight (mine on my salad) along with beans, cheese, whatever else we put on. Hope you guys like them (for that matter, I hope we do!!).
Post Edit: We had our chicken tacos for dinner and everybody scarfed them down. My little chef would not stop reloading his pile of chicken. What would I do differently? I would have added more chili powder and cumin. It was an amazing flavor but not really as "mexican" as I would have liked it.
